What is a commercial speed oven?

A commercial speed oven combines microwave, convection, and sometimes steam cooking technologies to cook food quickly while maintaining high quality. Because it uses a variety of methods to cook food, a single speed oven has the versatility to produce food for an entire menu. 


How does a speed oven work? 

A speed oven works by combining multiple cooking methods — typically microwave, convection, and sometimes steam heating. The microwave heats food quickly from the inside, while the convection fan circulates hot air for even cooking and browning.
